Am curious re the relationship between structural integrity and nutritional integrity. As well the difference between the effects of extreme cold to that of extreme heat (conventional cooking temperatures, of course) upon nutrition, enzymes and availability??? Thanks

Hi Guys, another gr8 vid! I too have been wanting to make raw b g, so this is a great idea! I also like some of the other comments re. marinating the eggplant in lemon juice etc. A question, do you have to peel the eggplant? I would think it would be nice with the skin left on? I have also made some eggplant bacon and it is YUMMY! As well as just eating it as a snack, I crunch it up and put it on salads and dips, it is a real hit in my household! Thanx again guys :-)

i LOVE baba ghanoush cooked, didnt think I would succeed with raw but I did!! and its awesome! I added a tad much garlic but I like garlic, and since Im the only one eating it, the more garlic the better!! thanks guys!!

Ok I tried the freezing method and it seems to not work for me. Tried it 2 days and it seemed to have a bitter taste to it. I dunno, maybe taking out the seeds after it has defrosted would help. Anyway, I am going back to roasting eggplant for baba ganoush. I do not believe in a 100% raw food diet anyway. Plus, with the weight training that I do, I need extra energy from complex carbs. If anyone has any tips on dealing with the bitterness even after freezing /defrost let me know!

@RawFatloss I have tried just about every raw vegan powder and sunwarrior IMHO is no better:( Very Chalky flavor…just can’t get past it. I have heard from people like Markus Rothkranz that we just don’t need those protein powders. But, do your research and decide whats right for you:)

I have dehydrated it. I put a little bit of seasoning on top and then dehydrated.

I am going to try freezing it then doing the above.

peel and slice eggplant into strips rub in salt and leave under weight for 24 hours. Squeez out the water and salt. Soak in vinegar for 24 hours then pack tightly into jars with some olive oil on top. You can add some red pepper and other herbs if you like. Makes a great condiment.

Had a dream about you guys last night. You were in MIlwaukee wisconsin and were selling those quatemalin knitted footie things and quatemalin hats with tassles. I know very random, lol. But Kevin was getting mad because no one was buying anything. You had a stand set up outside of a talking heads concert. It was very jumbled but thought id share this with you. lol

I love to peel an eggplant, slice into thin rounds, marinate in (tomato juice or salty solution if you do salt), fill with filling (raw pesto, mushrooms, raw cheese, whatever you like. Then fold the rounds over into half-moons, press w/fork to secure and dehydrate. Spoon some marinara over top an serve.
